Pita Veggie Pizza
For each individual pizza
1 pita bread round
A sprinkle of olive oil
1 clove garlic, chopped
1 tablespoon chopped onion
1 to 2 cups chopped greens, such as kale, chard, or spinach
1/2 cup shredded pizza cheese
In a small bowl, cook the garlic and onion a few seconds in the olive oil on HIGH in the microwave. Add the chopped greens and heat until they are wilted. Spread evenly over pita bread, top with the cheese and heat in microwave until cheese starts to melt, about 35 seconds.
Note: If desired, spread pizza sauce on the pita bread before adding the vegetables.
Pepperoni or other meat slices can be added.
Each person can make their own pizza with the ingredients they desire.
