Tortellini Pasta Salad
Tuesday September 2 2008 

1 large peeled, grilled and sliced into cubes (Zucchini)
3 Roma tomatoes, sliced into cubes
1 small red onion sliced thin
1 pepper can be; red, yellow or green
1 16 once package cheese filled tortellini pasta (in your grocers refrigerated section, or you can cook your own as long as you cool it off before making this salad)
1 can whole black olives drained well

In a food processor:

1/2 cup parmesan cheese

1/2 cup olive oil

1/4 cup balsamic vinegar

Basil leaves

3 clove garlic

Fresh ground black pepper to taste

Dash of sea salt

Mix till smooth and fold into pasta and veggies

Mix and serve or you can keep in fridge over night.  This dish travels well.
