1 tablespoon butter
1 cup whole grain bread cubes
1/3 cup cherries (frozen or canned, drained)
1 cup milk
1 tablespoon nonfat dry milk powder
1 egg
2 tabelspoons honey or molasses
pinch salt
1/2 teaspoon vanilla
1 tablespoon wheat germ
1/4 teaspoon cinnamon
Butter 1 quart microwave safe baking dish. Combine bread and fruit in dish. Beat together milk, milk powder, egg, sweetening, salt and vanilla. Pour over bread. Dot with remaining butter. Sprinkle with wheat germ and cinnamon. Cook on High until knife inserted in center comes out clear, about 4 minutes. Makes 3-4 servings.
Can be served for breakfast or as a dessert for lunch or dinner.
Makes a good after school snack.
Use drained pineapple or other fruits, if desired.
Burnt Sugar Glaze 1/2 c brown sugar 2 T butter 2 T water
Microwave for 1 minute - stir - heat again until it bubbles. Let cool and add to top of pudding!
