Recipe taken from Betty Crocker's Healthy New Choices cookbook
Prep: 15 minutes Bake: 25 minutes Yield: 12 muffins
Ingredients 1 C Fiber One© cereal 2/3 C Skim milk
1 3/4 C All-purpose flour 3 tsp Baking powder 2 tsp Ground cinnamon 1/2 tsp Salt
3/4 C Chopped, unpeeled apple 1/2 C Packed Brown Sugar 1/2 C Finely shredded carrot 1/4 C Granulated sugar 1/4 C Flaked coconut 3 Egg whites 1 T Vegetable oil 1 tsp Vanilla
Instructions: -Preheat oven to 375 F. Grease 12 medium muffin cups (or line with paper baking cups). -Crush cereal. Mix cereal and milk in large bowl; let stand 5 minutes (or until cereal is softened). -Sift flower, baking powder, cinnamon and salt together in small bowl. -Stir remaining ingredients into softened cereal. -Stir in flour mixture until just blended. -Divide batter evenly among muffin cups (cups will be almost full). -Bake 22 to 25 minutes, or until golden brown. Immediately remove from pan.
