Farmers Market Pasta with Vegetables

Ingredients:

1 pound spaghetti or linguini

2 cloves garlic, finely chopped

1 large onion, roughly chopped

2 small zucchini, sliced 1/4 inch thick

1 yellow squash, sliced 1/4 inch thick

3 tablespoons olive oil

8 oz Parmesan or Feta cheese

salt and pepper

Directions:

1. Heat water to boil. Cook pasta according to package directions, but try to have the pasta done around the same time the vegetables are finished sauteing. When pasta is finished cooking, drain water and add 1 tablespoon of olive oil over the pasta to prevent sticking.

2. In a large pan saute over medium high heat, heat 2 tablespoons of olive oil.  Add the cut up onions, zucchini and squash. Lightly season the vegetables with salt and pepper. Saute vegetables about 10 minutes, or until they have softened. After about 5 minutes of sauteing, add the finely chopped garlic to the vegetable mixture.

3. Transfer the cooked pasta to a serving dish and spread the vegetables over the pasta. Top the dish with freshly grated (or crumbled) parmesan or feta cheese.
