10 pounds country-style beef ribs
3 tbsp. olive oil
salt
black pepper
4 cups marin (rice wine)
4 cups brown sugar
3 1/2 molasses
3 cups sweet chili sauce (mae ploy brand)
2 cups honey
2 cups water
2 Thai chilies finely chopped
2 tbsps. ginger
1 tsp. red pepper flakes
1 cup soy sauce
Brush ribs with oil then salt and peppers. Grill ribs to medium rare place on platter. Place marin, sugar, molasses, chili sauce, honey and water in large bowl and stir until sugar dissolves. Add cilantro, chopped chilies, ginger and pepper flakes. Pour into roasting pan; add reserved cook 2 hours on 350.
Drain pan into stock pot and reduce 50%. Add soy sauce, and lime juice cook until thickened and sticky.
Pour over ribs again and bake until meat falls off the bone.
