1/2 pound asparagus washed 2 tablespoons minced onion 1/2 cup mushrooms sliced 2 teaspoons olive oil Salt and pepper to taste as desired 2 tablespoons sour cream (optional)
Break tough stems from asparagus, then break into 1 1/2 inch pieces. Combine with onion, sliced mushrooms and olive oil in microwave safe bowl. Cook covered in microwave on HIGH for 1 1/2 – 2 minutes, just until tender and still crisp. Remove from microwave when you can smell the vegetables. Season with salt and pepper, if desired. Garnish with sour cream. Serve hot. Makes two servings.
