Makes 12 muffins
Ingredients:
3/4 cup unbleached flour
3/4 cup whole wheat flour
1 1/2 tsp. cinnamon
1 tsp. baking powder
1/2 tsp. baking soda
1 cup buttermilk
1/2 cup oat bran
1/4 cup firmly packed brown sugar
2 Tbsp. canola oil
2 egg whites
1 1/2 cup shredded, peeled apples
Directions:
- Preheat oven to 400 degrees F.
- Coat a 12-cup muffin pan with nonfat cooking spray and set aside.
- In a medium bowl, combine the flours, cinnamon, baking powder and baking soda.
- In a large bowl, beat the buttermilk, bran, brown sugar, oil and egg whites.
- Stir into the flour mixture until just combined.
- Fold in the apples.
- Spoon the batter into the muffin cups.
- Bake for 18-20 minutes, let cool for 5 minutes then remove from pan and finish cooling on wire rack.
