Apple-Cinnamon Muffins

Makes 12 muffins
 
Ingredients:
3/4 cup unbleached flour
3/4 cup whole wheat flour
1 1/2 tsp. cinnamon
1 tsp. baking powder
1/2 tsp. baking soda
1 cup buttermilk
1/2 cup oat bran
1/4 cup firmly packed brown sugar
2 Tbsp. canola oil
2 egg whites
1 1/2 cup shredded, peeled apples
 
Directions:
  1. Preheat oven to 400 degrees F.
  2. Coat a 12-cup muffin pan with nonfat cooking spray and set aside.
  3. In a medium bowl, combine the flours, cinnamon, baking powder and baking soda.
  4. In a large bowl, beat the buttermilk, bran, brown sugar, oil and egg whites.
  5. Stir into the flour mixture until just combined.
  6. Fold in the apples.
  7. Spoon the batter into the muffin cups.
  8. Bake for 18-20 minutes, let cool for 5 minutes then remove from pan and finish cooling on wire rack.
