2 cups sliced cucumbers
1 medium onion, sliced
1/2 cup sugar
1/2 cup cider vinegar
1/2 teaspoon salt
1/2 teaspoon celery seed
1/2 teaspoon mustard seed
1/4 teaspoon turmeric
Prepare the cucumber and onion slices. Mix the remaining ingredients in a 2 quart microwave safe bo wl. Add the cucumbers and onions, stirring gently to blend. Microwave on HIGH for 7 minutes. Store in the refrigerator in a covered container for up to three weeks.
Note: Cucumbers no larger than 1 inch in diameter are best for this recipe.
