Cowboy Steaks

Prep 10 minutes

Grill 10 minutes

Serves 6

3 Tbsp. chopped fresh cilantro

2 Tbsp. red-wine vinegar

2 tsp. olive oil

2 tsp. chili powder

1/2 tsp. salt

1 1/2 lbs top round steaks, 1/4 inch thick, trimmed

Mix the cilantro, vinegar, oil, chili powder, salt in a zip close plastic bag; add the steaks,  Squeeze out the air and seal the bag; turn to coat the steaks.  Refrigerate turning the bag occasionally, at least 30 minutes or up to an hour. Set grill to medium high heat.  Add the steaks and cook until an instant-read thermometer inserted into the side each steak registers 145 F for medium, about 5 minutes per side. Transfer the steak to a cutting board and cover loosely with foil.  Let stand 5 minutes.  Cut across the grain into 24 slices.

While the steaks stand before slicing in step 3, grill a bunch of whole trimmed scallions 1-2 minutes per side for a zesty garnish.

Roasted Pepper Salad

Prep 15 Min

Roast 45 Min

Serves 8

Make Ahead 2 days

2 large plum tomatoes, seeded, coarsely chopped

1/3 c. pitted Kalamati olives, chopped

1 Tbsp. capers, rinsed and chopped

1 large clove garlic, crushed through a press

1/4 tsp red pepper flakes

3 tsp. olive oil

4 different color bell peppers cut into 1-inch wedges

2 Tbsp. red-wine vinegar

1/2 taps salt

2 Tbsp coarsely chopped fresh basil or parsley

Preheat the over to 350 F.  Spray a large rimmed baking sheet with nonstick cooking spray Mix the tomatoes, olives, capers, garlic, red pepper flakes, and 1 tsp oil in a bowl.  Spread the bell peppers, skin side down, on the baking sheet.  Spoon the tomato mixture over them.  Cover loosely with foil and rest 30 minutes (Instead of baking, you can also transfer mixture into an aluminum foil packet and cook on the grill until tender, about 5-7 minutes). Let the pepper mixture cool. Transfer to an airtight container and refrigerate up to 2 days. To serve, transfer the salad to a medium bowl and let come to room temperature, about one hour. Whisk the remaining 2 tsp. olive oil, the vinegar and salt in small bowl.  Drizzle over the salt and sprinkle with basil.

Fresh Finds: Remember that grilling is not just for meat and poultry. Fresh vegetables are a delightful treat.  Choose foods that are tender and cook quickly and are also less expensive like potatoes, onions, corn and squash - add basic seasonings and they are good to grill. To bulk this up as a bigger side-dish add inexpensive pasta or beans to the grilled vegetables.

Cut those Coupons.    And think beyond beef - check your local supermarket circular for what's on sale.  Remember you can enjoy a lean burger made from chicken, turkey or salmon. 

Water Down your beverage bill.  Try skipping the soda aisle and use good old tap water and teach the kids how to make "sun tea" - throw in some tea bags and put it on the porch.   Or liven up regular water with leftover fruit-like lemons, limes, oranges.

End the day on a sweet note with activity.  Take a walk after dinner – not only is walking a free form of exercise but also a great way to connect with family, friends and neighbors.  Research shows that walking helps to burn calories, reduce stress levels and help you sleep better.
