Ingredients:

4 medium tomatoes, roughly chopped

15 oz goat's milk cheese, crumbled

5 large fresh basil leaves, sliced thin

1-2 tablespoons olive oil

Kosher salt 

Freshly cracked pepper

Directions:

1.       Roughly chop tomatoes and spread across the bottom of a wide, shallow bowl.

2.       Using a fork, crumble cheese into very small pieces. Sprinkle cheese over the top of the tomatoes.

3.       Rinse and pat dry basil leaves. Thinly slice the basil. Sprinkle leaves on top of the goat's cheese.

4.       If  desired, drizzle olive oil over the salad.

5.       Finish the salad with a light sprinkle of salt and pepper.
