(An original recipe by Anita Jany of Columbia Catering Company)
Crumb topping: 1 cup flour 1/2 cup brown sugar 1/2 tea spoon salt 1/2 cup butter or butter flavor Crisco 1/2 cup toasted pecans
Cut together all above ingredients in a large mixing bowl then set aside
Filling:
1/2 cup all-purpose flour 6 to 7 cups peaches, cut into thin slices 2 cup (dark) brown sugar 2 teaspoon cinnamon 1 teaspoon nutmeg 2 tablespoons butter
In a medium bowl combine the peaches and toss in the butter. Add sugar, flour, cinnamon, and nutmeg and continue mixing until they are well coated.
In a deep pie dish line the bottom with a pre-made or pre-purchase pie crust
(I prefer Pillsbury pie crust)
Add the peach mixture, then coat the top with crumb topping mix.
Bake about an 45 minutes to an hour on 3.50 bottom shelf of the oven.
