Please, no oven, no hot skillets - EGG SALADS for hot weather suppers! Enjoy with sliced tomatoes, some kind of hard bread, as in bagel chips or huge salty pretzels. Dessert? Fruit - it's too hot for anything else, and fruit is in full season.
DILL EGG SALAD (combine, toss, refrigerate)
8 eggs, hard-cooked, peeled, chopped 1 TBS mayonnaise 2 TBS Dijon style mustard 1 tsp. dried Dill weed 1 tsp. Paprika 1/2 red onion, pretty finely chopped Salt/pepper to taste
PIMENTO STUFFED GREEN OLIVE EGG SALAD (combine, toss, refrigerate)
8 eggs, hard-cooked, peeled, chopped 1/2 c. mayonnaise tsp. pepper 1/4 tsp. Paprika 2 TBS chopped pimento-stuffed green olives
EGG SALAD WITH CHOPPED GREEN ONION (combine, toss, refrigerate)
8 eggs, hard-cooked, peeled, chopped 1/2 cup mayonnaise 1 tsp. yellow mustard 1/4 cup chopped green onions 1/4 tsp. paprika Salt/pepper to taste
AWESOME EGG SALAD WITH A KICK (combine, toss, refrigerate)
12 eggs, hard-cooked, peeled, chopped 1/2 cup mayonnaise 1/2 cup sour cream (can use low-fat if desired) 2 TBS prepared horseradish 3 TBS Dijon-style mustard 2 TBS pretty finely chopped red onion 1/4 cup real bacon bits 1/4 tsp. paprika Salt/pepper to taste
