Ingredients:
2 2/3 cups canned black beans, rinsed and drained
1/2 cup frozen whole-kernel corn
1/2 cup diced yellow bell pepper
1/2 cup diced plum tomato
1/4 cup diced red bell pepper
1/4 cup minced shallots
1/4 cup lemon juice
1 Tablespoon plus 1 teaspoon extra virgin olive oil
1 teaspoon ground cumin
1 teaspoon coarsely ground black pepper
1/2 teaspoon salt
Instructions: Combine all ingredients in a bowl. Serve relish chilled or at room temperature with salmon, tuna steak, or other fish; with Mexican or Tex-Mex fare; or with guacamole and corn or tortilla chips.
Serving size: 1/2 cup
