Tomato and Mozzarella Salad

Tomato and Mozzarella Salad

Start to finish: 10-15 minutes

Ingredients:

1 small red onion, very thinly sliced

9 Roma or plum tomatoes, sliced 1/2-inch thick

4 ounces of mozzarella cheese, shredded or thinly-sliced

black pepper and salt to taste

1/4 cup chopped fresh parsley

2 teaspoons finely chopped fresh basil

3-4 garlic cloves, minced

2 Tablespoons extra-virgin olive oil

2 teaspoons red wine vinegar

Instructions: Place a layer of onions, a layer of tomato slices, and then a thin layer of cheese in a medium-sized, preferably transparent, dish. Sprinkle with a bit of each salt, pepper, parsley, basil, and garlic. Drizzle with a bit of olive oil and a splash of vinegar. Continue layering until all ingredients are used. Enjoy chilled or at room temperature.
