Ingredients:
1/2 cup butter
1 cup sugar
1 cup firmly packed brown sugar
1 tsp vanilla extract
1 egg
2 egg whites
1 cup AP flour
1 cup whole wheat flour
1 1/4 tsp baking powder
1 1/4 tsp baking soda
2 cups dry quick oats
2 cups crisp rice cereal
1/2 cup raisins
Cooking spray
Optional Ingredients:
Creamy peanut butter
Nuts
Mini Marshmallows
Directions:
Preheat oven to 325 degrees. Cream butter in large bowl; add sugars and vanilla, beating until light and fluffy. Add egg and egg whites; beat well. Sift together flour, baking powder and baking soda; gradually add to creamed mixture, mixing well. Stir in oats, rice cereal and raisins. Spray cookie sheet with cooking spray and drop tablespoon-sized dollops onto cookie sheet. Bake for 18 minutes or until lightly browned (depending on your oven). Cool on wire racks. Makes 6 dozen cookies.
Optional topping:
Ice cookies with peanut butter and decorate with nuts and mini marshmallows to add your own festive touch.
