Huffstutter Bean Salad

Ingredients:

1 Gala Apple chopped

1/4 cup olive oil

1 Tbsp Dijon mustard

2 tsp Worcestershire sauce

1 Clove crushed garlic

1 can Garbanzo beans

1 can Red beans washed

1/2 cup Sliced scallions (or onions)

1 Fresh tomato

1 Green pepper

1/2 cup Cheese (goat, parmesan, or feta)

1 tsp Sugar

1/4 to 1/2 cup Balsamic Vinegar

Directions:

1.    In a wooden salad bowl Mix: olive oil, Dijon mustard, Worcestershire sauce, and garlic.

2.    Next, add: beans, apple, scallions, tomatoes, green pepper and cheese.

3.    Once mixed, in a small bowl mix sugar, Balsamic vinegar and pour over salad. 

4.    Toss well and serve.

Makes 8-10 one-cup servings
