Ham and Cheese Corn Muffins

Makes 9 muffins
All you need:
1 pkg corn muffin mix
1/2 c chopped deli ham
1/2 c shredded Swiss cheese
1/2 c milk
1 egg
1 T Dijon mustard
 
All you do:
Preheat oven to 400F.  Line 9 muffin cups with paper liners or spray with a cooking spray.  Combine muffin mix, ham and cheese in medium bowl.  Beat milk, egg and mustard in a small bowl.  Stir milk mixture into dry ingredients; mix just until moistened.  Fill muffin cups two-thirds full with batter.  Bake 18-20 minutes or until light golden brown.  Remove muffin pan to cooling rack.  Let stand 5 minutes.  Serve warm.  Can serve with honey butter for a sweeter flavor.
