Mounds (tasting) Candy Bar

Mounds Candy Bar

3/4 cup mashed potatoes (without milk or butter)
1 pound of Coconut - 4 cups
1 tsp Almond extract
1 pound Powdered sugar

To mashed potatoes add the powdered sugar a cup at a time and stir, don't freak out when the mixture becomes gooey.  When all the sugar has been stirred in you should have a mixture that looks like icing.  
To this add flavoring and the coconut.  The coconut acts as the binder.  Roll into balls or make little log shaped candy, place in refrigerator for 1 hour or until firm.

Using a good quality dark or unsweetened chocolate (may use semi- sweet but it will be very sweet), melt chocolate over double boiler or in microwave (add 1 tsp. shortening to chocolate while melting). When chocolate is smooth, dip candies into chocolate, place on waxed paper to set.

Makes 20 servings.
