According to information my daughter picked up in Hawaii last fall, this dish was created in 1949 in a local Maui diner for the young surfer boys who came in hungry, but without much money. The cook created the dish and named it after one of the boys. There are a few variations, but the most beloved is. . . .
White rice, cooked
Hamburger steak (fried)
An egg, fried "over easy"
Brown gravy
Put rice on a warm serving plate, top it with the cooked hamburger steak, Put the egg (fried over easy, should have some soft yolk - not hard-cooked) over the steak. Pour brown gravy over the top. Pop the yolk to let the yellow run into the rice. Enjoy! Mahalo!
Note to Columbia locals - Ed's Diner in Flatbranch asked for this recipe. Since most diners always have Brown Gravy ready, they may make it for you!
