COLUMBIA - Cookouts and barbecue go hand and hand on a hot summer day in Missouri.
In the spirit of competition, barbecue contests are not hard to find, but there is more to great barbecue than just lighting the grill.
The judges of the Boone's Lick Trial Barbecue Contest know what it takes to eat good barbecue. And despite what some people may think, it's not so easy to make finger licking good barbecue.
"It's absolutely an art form, absolutely an art form. The way it is displayed, it's appearances," said judge John Shrum.
Shrum is a certified Kansas City Barbecue Society judge from Columbia. On Saturday he had to determine which meat at the contest was the best. He says KCBS competitions are not just fun and games.
"It is a very thorough system, and it's serious business," stated Shrum.
But Team Worley from Montgomery City enters competitions and admits to having fun while still cooking good brisket.
Shrum says the judges are responsible for four categories, but agrees the brisket is the toughest. But Team Worley's still hopes to place.
"We pick the towns that are the most convenient for us and where we know our friends are because we've made lots of friends. Doing this it's a great time," said Kandy Worley.
"There's a lot of different ways, there's Texas brisket ya know. There's the Southern way, everybody cooks it different depending on what region you're in," explained Kevin Worley.
Belly Brothers BBQ from Columbia won the overall competition. Great Grills O'Fire from Jefferson City placed second overall. To read more about the Kansas City Barbecue Society, click on the link included.
